My sis gave me a copy of Rose Levy Beranbaum's 'Heavenly Cakes' - a hefty book!
Her methods and explanations are scientific and wonderful! I would recommend getting her Cake Bible (it's a bit cheaper) if you want to step up your cake baking skills. (bookdepository.co.uk is offering it at around 20 sterling pounds, for example.)

The link above does not give measurements in weight. The book does. I was surprised by the way she mixes her ingredients - not the usual creaming of butter with sugar as the first step. The crumb is tender yet holds its shape; the taste is excellent. I have tried five of her recipes and am impressed thus far. For the dough - Put together 45 grams of fresh yeast in a glass of warm milk, add pinch of salt and 50 grams of sugar (2 tablespoons). Leave in a warm place for a 15 minutes (you should see a cover on the milk from yeast). Than melt 100 grams of butter, add 2 beaten eggs (butter shouldn't be hot), 2.5 tablespoons of water, milk with yeast and mix it.
Add half kilo (500 grams) of white flour gradually. Leave the dough in warm place (I put in slightly heated oven). After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes.
In a small bowl, combine brown sugar, 50 gr melted butter and cinnamon. Roll dough into a rectangle. Sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into rolls (width about 1.5 cm).
Place rolls in a lightly greased baking pan. Cover and let rise until nearly doubled, about 15 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C). Bake rolls in preheated oven until golden brown, about 15 minutes.
For the cream mix cream cheese (i used Migros Budget Frischkäse Natur), milk and sugar powder. Mix and put on the top of hot baked rolls. Enjoy | This user would like to thank Eva_Bach for this useful post: | |

Oh, those lovely cinnamon buns reminded me of those I made a while back. Easter is coming soon - who is colouring eggs?  The sun shining brightly today reminds me ice-lolly time is around the corner, too.

Sorry I have no recollection of where I bought it - perhaps in Holland, Italy or Malaysia - all those years ago.
