Re: White chocolate cake

Milk chocolate and white chocolate are chemically very similar so can be used interchangably. The main difference is that white chocolate melts at a lower temperature. I saw an amazing chocolate cake baked by Little Polka on the forum. If memory serves it was a chocolate truffle cheesecake and this could easily be made with white chocolate.

Re: White chocolate cake

I just made "Richdogs Favourite Chocolate-Chocolate Cake"*:

1 cup white sugar
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 eggs
1/2 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup boiling water

1. Preheat oven to 175 C. Grease and flour 1 nine inch round pan.
2. In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pan.
3. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.

Can be doubled and is better the next day.

*RICH I MADE YOUR CAKEEEEEE!

Yeah, it is true. In the original recipe it's dark chocolate and nuts, in the white version you can use white chocolate and almonds Or u can try and make so called blondies which is really a recipe for brownies with white chocolate and almonds

Re: White chocolate cake

Perhaps this recipe would work for you?

Quote:
Swiss White Chocolate Cake
Ingredients
  • 8 (1 ounce) squares white chocolate
  • 1/2 cup hot water
  • 1 cup butter
  • 1 cup white sugar
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 2 1/2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 4 egg whites, beaten

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour and baking soda; set aside.
  2. Chop the white chocolate and place it in a medium bowl. Pour the hot water over it and stir until chocolate is melted and smooth. Allow to cool to room temperature.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolks one at a time, then stir in the melted white chocolate and vanilla. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated.
  4. In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
  5. Pour batter into prepared pan. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Re: White chocolate cake

Hello sunflower76,
Like your husband, I am also a fan of white chocolate and have lots of recipes. If you go on to bbc.co.uk/goodfood, you will have access to thousands of fantastic recipes, just put into the search the recipe you would like to find. I also use google, once again put in the recipe you want to find and it will be there.
My family like 'white chocolate creme brulee', white chocolate cheesecake and if you want a quick fix that is a bit healthier, put some double cream into a pan, heat it up gently ( don't let it boil) when it's hot remove it from the heat, drop in some white chocolate and stir until it melts and then pour it over some summer fruits. You can make it a bit more of a dessert by crumbling some shortbread bicuits over it.
PM me if you would like any more help with your recipes, I am a recipe junkie!
