Around here they specify the type of potato and often the name. The most common festkochende potatoes seem to be "Charlotte", maybe you should look out for that name. I hope that helps.

I treat myself to the odd pack of packaged roesti.. with bacon and eggs it's a carblicious hangover cure...

The solution to the OP problem is to put a heavy plate on top of the roesti while it's cooking and to make sure you cover it completely. The plate should press down on the spuds.

Medium/low heat for 20 minutes then.. carefully.. hold the plate down with an oven glove and flip the pan over.. the roesti should now be on the plate and the 'uncooked' side should be face down on the plate.. slide the roesti back into the pan and wait another 15 minutes.

I also indulge in the odd pack of pre-made roesti... (the other vice being Findus crispy pancakes FTW) mmm, decadence.

Anyway - I don't even bother frying them, since they're precooked, I just pop them in the oven They come out lovely and crisp.

Jokes aside I can now say that I have purchased one of these lids. I can also recommend it as I used my last packet of rosti on it today and no mess on the wall or floor this time.

It came from Migros (the spit lid protector).

Next time I think it will have to be a home made effort on the rosti.
