They’ve had that for years, it’s nowhere near as good as the UK self raising flour so prepare yourself for some disappointing cakes unless you add extra baking powder.

Oddly, I only just noticed that my current bag of flour I'm using for general purposes is that one, containing some raising agents. As if it wasn't already enough trouble trying to work out how much baking powder and/or bicarb to put into cake recipes.

How much extra do you find is needed, or perhaps I should ask in what proportion it's already there, so I can subtract it from the recipe-stated amount?

By a process of trial and error I found that adding about half a teaspoon of baking powder for each 100g of flour gave the best results.
I have no idea what proportion is already there and itís been a while since I bought any so I donít have a packet I can check.

You do know that if you bake at altitude, you need more raising agent- one of the first lessons taught to Ch‚let chefs, apparently.

Yes. Been battling that for years with bread making. Difficult enough with the vagaries of flour types and lack of consistency even between T55s or T65s. Tried more yeast, more sugar, etc. but it's still often a lottery how succesful it will be.

Cakes I don't bake often enough to get the full understanding. And when I do they tend to be more solid types anyway, like my date and walnut loaf (cake, just not really a sponge, IYSWIM) which uses both baking powder and bicarb, but is still good even if slightly under-raised.

EVs are the future, but should come with swappable batteries.

One explanation that I haven't seen mentioned is that it is clickbait, a ploy by EB to increase the post count and bring in more advertising revenue
