Have you ever done this for real (I mean analyse realistic scenarios) ? I have when either getting followed, or in a situation in a pub. Thankfully it never happens but its funny the way the fight-or-flight instinct works. In fact I seem to remember a wellknown forumer describing his alternative use of a pub ashtray...

I do it often. Even when no-one is following me I set up a scenario in my head. I have to find all the keys neccessry to open all the doors into the flat WITHOUT panicing. I'm not paraniod (yes you are), I just like training myself to remain calm. I've seen all those movies where the girl gets killed coz she's fumbling with her key. I scare myself sometimes!
