UHT whipped cream crisis

I don't know if this is the right place to ask but I have a bit of a problem with cream. Being a good little nanny, and seeing as it's the mothers birthday, me and the lit'lun are baking a chocolate cake. I accidently got UHT full cream (wanted fresh - should learn to pay attention) to whip up but it just won't. almost 20 mins with a hand mixer and all I'vw got is white spots all over me, the kid and the kitchen and some very sloppy cream. Should I add sugar? Any tips! Meanwhile, I'll just continue beating........

Re: UHT whipped cream crisis

You're not using coffee cream are you?

Leave it, you are wasting your time. Go to Coop, buy the cream in RED plastic bottle and proceed to whip/beat.

Once you have white spots of sloppy cream continuing beating serves no purpose...

Re: UHT whipped cream crisis

You can buy a special powder in the coop that you can add and it will stiffen the cream. I just spent a few minutes looking in my cupboards, but i don`t have any left so i am sorry i can`t tell you the name.

Well certainly not from me! The bloody cake is just about cooked and the cream is still not whipped and I tried everything, figure eights, round and round, kinda straight through the middle, nuthin. It's going in the freezer, they didn`t hire me for my culinary expertise and I don't have to eat it!

you must beat it in one direction.
if you've beaten it for 20 minutes and it's not firming up, it's beyond help.

Gooner has the best advice.

Calm down dear.

I can see you've not done this before. Cakes are baked, not cooked. Also, when dealing with whipped cream, the cake needs to have cooled down otherwise any heat from the sponge will melt the cream, rendering your beating efforts ineffective.

Bake the sponge, take it out to cool, go buy your cream (get some vanilla sugar to sweeten while you're there), whip your cream, administer cream to your cake, and then smoke that after action satisfaction cigarrette.

Quick fix: go back to Migros and buy an aerosol of the squirty stuff - no-one'll know the difference.

Re: UHT whipped cream crisis

If you can't get out of the house to buy fresh full cream, look in the fridge to see if there's sour cream or butter. Whip about 150ml (or 150g) up with 6 tablespoons of powdered sugar and 1 teaspoon of vanilla sugar (or 1 tbs of cocoa powder).

Alternatively, melt a broken up 150g bar of chocolate with 20g of butter (add a bit of that damned cream you were beating to death if it's too thick to spread) on low heat (in microwave for 20-30 seconds; or on stove). Very yummy on top of cake. But lay it on only after cake has cooled down.

It may not be good for Mummy's waistline but she'd be thankful she's not getting a pearl necklace from you (or any of these wise guys on EF).

Cook, bake, someone like me can hardly tell the difference. I`ve kinda given up on the idea now. It's a time thing. Thank-you for your professional words of wisdom, who needs women anyway!
