Doesn't look like this is relevant in these cases though. The "trigger" is the registration, so nothing's binding until that has happened, and that can be done using insurance from any company that accepted the application.

Or am I missing something?

Yes, you are completely right.

I contacted company X few times, today they told me I can have 15 proof of insurances in Road Tax Office, the case is which one I will choose during the registration. Offer is not binding until insurance starts. This is how it works in Switzerland and for me completely makes sense. They are also willing to change my data including coverage of insurance and/or my personal data.
At the end no problem at all, but I will confirm once the car is registered.
