Just watched the video again because I wasn't sure if the three guys were air marshals or cops, and am still not much the wiser. NYTimes says "One of the security officers has been placed on leave, according to the authorities." This article has a decent write up of the procedure that most airlines follow...

Personally, I've only been bumped twice, but it was on both return legs of a trip. We were on a work trip to HKG with an Emirates rep back in March 2012, when their entire A380 fleet was grounded because of faulty wing joints, so the whole thing was totally unavoidable. Initially, it looked as if we'd be delayed for four days, so I was just glad to get home just one day late, and after the airline paid for an overnight in Dubai.

One has the word "Police" written on his back - seems to gel with the reports that one was police, the other two airport security.
