You will NOT be limited to living in the canton your wife works in.

I agree with looking at smaller villages for bakeries. The ones in cities seem to all be supplied by the same industrial bakery. Ask at the small village shops.

I can't help with Bern

Here is one in Fribourg which is very close to Bern. They make breads from a few countries. They may be open to your sour dough idea.

Another one in Yverdon (moulin de Yverdon) which is a bit further up from Lausanne.

The Gros de Vaud area between Lausanne and Yverdon is called the bread basket of Switzerland. Maybe you can find more around that area.
