knife sharpening service in Zürich?

Hello all,

Can anyone recommend a place to get kitchen knives sharpened in Zürich? I saw the old thread about Bolleter Schleifservice, but they don't seem to visit anywhere in the city center.

Thanks!

In Horgen, once a week there is a truck there, can't remember the day of the week though, and they will sharpen knives or anything while you wait.

Re: knife sharpening service in Zürich?

Adding to an existing thread. Did the OP find a good sharpening service? I am looking to get our kitchen knives properly sharpened.

I found Lorenzi on Stampfenbachplatz while on a Sunday stroll. Has anyone used this shop?

Open to other recommendations too.

Cheers,
Nick

They also run a course in Knife sharpening that sounds interesting.

I bought a whetstone myself through Amazon and followed some Youtube tutorials, I thank evolution for nails, as I nearly severed a fingertip, my knives are that sharp!

The one at Stampfenbachplatz has a sharpening course fairly regularly. Not sure if it is free, if you bring your own knifes, if you are 'expected' to buy after.

But I always see it full of neck beards and hipsters---so it looks fairly popular.

Just for the record - honing (grinding a new edge with a whetstone) and sharpening (the already-present edge) are two different things.

But congratulations for achieving the result

Re: knife sharpening service in Zürich?

For those who are in the know:

Any quick pointers or guidelines to share (for sharpening, not honing--I already learned something!).

I just recently bough a great set of knifes in Japan, but didn't go for a stone yet.

They still slice everything like butter---but at somepoint, I will have to do some general maintenance.

Spend a bit of time on some of the knifemaking forums and/or youtube. There are all kinds of aids, some of them crap, some not. Be prepared to spend a bit, but also take the time to understand the process.

I sharpen pretty much everything freehand, always have done, including drillbits, chisels, planes etc.

A good selection of stones is not a lot of money.

There is a certain element of zen involved. Once you get to the point where flatting a stone is not a big deal you've mastered it.

If you fancy a trip out Rapperswil way - Elsener Messerwschmied is highly recommended:

OK guys let's organize an EF event at JagWaugh's place, and everybody brings their knives

I'd probably bore you all to death, then be left alone to mop the blood up. You have to teach your elbow what exactly a 20 degree angle feels like. I can blabber your head full, but that makes it even harder for your elbow to learn. If you didn't start teaching your elbow before 10 years old your best bet is probably a device that fixes the angle for you, and learning how to use a knife steel without removing fingers or knuckles.

Any of the boxed sets shown here would be fine:

Re: knife sharpening service in Zürich?

This I have found excellent to keep an already reasonably sharp knife super sharp, and works on semi blunt knives.

x3 stone wheels of different grades just add water and follow the instructions.

Cheap too

Re: knife sharpening service in Zürich?

On a side note, if you do decide to keep your knives absolutely razor sharp, you also need to remember to warn any visitors that this is the case.
