There was a very interesting series of documentaries on the BBC recently called "The Men Who Made Us Thin", they looked at how such things as low-fat diets came about, looked at the motivation for the theory behind them and other diet & exercise advice then looked at them from a the perspective of current scientific knowledge. I tend to add some green veg and have a little less meat but yeah, that's what I eat and I lose weight.

There are lots of healthy choices that are sweet. There are lots of unhealthy choices that are sweet. Nothing can be eaten freely.
If you're craving something, but not hungry, and otherwise, have eaten all the things your diet permits for that point in the day, just drink a lot of water and try to occupy your mind with something else that consumes your thoughts. Sometimes we eat and drink out of habit, not necessity. Exercising is good for distracting... Watching a film... Learning a language... Telephoning or seeing friends... Reading...
Whilst you are still just a few days into the changes, it might help to celebrate/recognise the success at the end of each day, so you have a burst of feel-good momentum to carry you into the next day. It could be via a calendar with smiley faces... A long soak in a steamy bubble bath...
Are your hubby and kids also healthy eating? Are they encouraging your efforts?
Would starting a blog appeal to you, so you can photograph and document your progress, and inspire others?
Food control is hard, but it's worth the rewards. You never regret resisting the unhealthy options the next day when you look at your body and feel energised.

This is what my doctor gave me, it doesn't have much info. Breakfast:
-coffee with milk
-20gr. Bread or cereal
-20gr. Slice of chicken/turkey Snack:
- 1 fruit Lunch:
-vegetables (as much as I want)
-potatoes 100gr. Or pasta 30gr. Or rice 30gr.
-legume 50gr.
-meat 100 gr. / 1 egg
-1fruit Snack:
-2 yogurts / glass of milk
-1 fruit Dinner:
Same as lunch but 50% of the plate being carbohydrates Prohibited:
Olives, crips, honey, sugar, fried, etc. Permitted:
1 glass of wine, light drinks, 2 spoon of olive oil per day.
For a total of 1200 cal per day.
With a ratio of: 55% is carbohydrates, 30% fat and 15% proteins.

I am a bit comfused why your doctor has put you on such an extreme diet - your weight is fine, right? Do you really need to be that strict to control the pre-diabetes? 1200 calories is not a lot...I would be depressed if I were put on that diet, I am afraid...
