My bike has a digital display so easy to see what speed I'm going. That said I tend to watch the spedo like a hawk which kind of defeats the purpose.
No need to worry about stalling really. Just keep your foot on the back break slightly (will give you some extra balance), give the bike some gas and play with the clutch to keep your speed down. That way no risk of stalling yet still going slow. Takes a bit of practice but makes it a lot easier. I imagine other more seasoned riders can give you some more advice.

My bike has ABS but the bike I'll be using for the practical doesn't so will have to have some fun perfecting emergency stops without the ABS. My instructor actually explained that even with ABS you can learn to "break properly", that's to say as if you didn't have it. Just release the break slightly when the ABS kicks in (this simulates what you should do if you feel the wheels skidding). That said I don't think I'll ever buy a bike without ABS. I went two months without feeling it kicking in then suddenly once at the end of a long ride it kicked in three times in the space of thirty minutes. Not saying anything bad would have happened without it but it certainly made me appreciate it. It's like a possible get out of jail (well hospital) free card for when your concentration lapses slightly.
