Mobile roaming - choosing network

I'm currently in the UK and have Sunrise as my home cellular provider. I have bought a 30 day unlimited data roaming package and the roaming partner seems to be O2 (settings are on automatic). The connection where I am for data is pretty poor, so in settings I changed network selection to manual and chose EE which is giving me a much better signal.

The question is, if I do this will Sunrise honour the data package I purchase or does this only work with a specific local network partner? I've scoured their website and it doesn't list who their partners are in the UK.
